Slow-Cooker Four Cheese Mac&Cheese

Ingredients
2 tsp extra virgin olive oil3 C elbow macaroni1 C onion, minced2 cloves garlic, minced1/3 C all-purpose flour3 C skim milk3/4 C Fat-Free Cottage Cheese1/2 C low-fat extra=sharp cheddar cheese, shredded1/2 C part-skim mozzarella cheese, shredded1/2 C grated parmesan cheese1/4 tsp salt1/4 tsp black pepper1/2 C bread crumbs
Directions
1. Coat slow-cooker with oil (4-6 qt). Cook macaroni about half way; drain well. Combine in cooker with onion and garlic.
2. In blender, combine milk, cottage cheese, and flour and process until smooth. Add to cooker and stir.
3. Add cheddar, mozzarella, 1/4 cup of grated parmesan, salt, and pepper. Stir to combine evrything.
4. Cook 2 1/2 -3 hours on low. Combine remaining parmesan and bread crumbs. Sprinkle over mac & cheese.
