Fruity Brown Rice Salad

1 cup cooked brown rice1 cup red grapes, cut in half2 small, seedless Clementines, peeled and sectioned1 small avocado, peeled and cubed2 teaspoons light olive oil2 teaspoons red wine vinegar2 tablespoons unsweetened apple juice
Cook your rice according to directions and cool. Measure 1 cup into a 2 quart mixing bowl, add cut up grapes, sectioned Clementines (or mandarines), and cubed avocado. Mix olive oil, red wine vinegar, and apple juice well in small bowl or custard cup and pour over salad. Mix well. Serve over a bed of your choice of greens or serve as is.
