Ingredients
10 chicken thighs3 cups water1 cup water1 medium carrot1 medium stalk celery.5 cups oatmeal2 tsp salt.25 tsp black pepper1 bay leaf1.5 cups sliced leeks (with tops)
Directions
7 servings (about 1 cup each)

Heat all ingredients except leeks and mushrooms to boiling in a Dutch oven. Reduce heat. Cover and simmer 30 min. Add leeks and mushrooms. Heat to boiling. Reduce heat. Cover and simmer until thickest pieces of chicken are done, about 15 min. Remove chicken and cool slightly. Remove chicken from bones and skin, cut into 1 inch pieces. Skim fat. Remove bay leaf. Add chicken back to broth. Heat 5 min.
