Egg oatmeal Pancake

Ingredients
2 egg whites1 whole egg1/4 C old fashion oats1 tsp flax seed 1tbsp dried cranberries1 tbsp of either chopped pecans, walnuts, or almonds (your preference)cinnamon and pumpkin spice (optional)4 slices of Butterball low sodium turkey bacon
Directions
beat the spices, eggs and whites together, add oats, flax seed, cranberries, and nuts and mix well

spray pan with Pam and pour in mix and cook like a pancake!

    I really enjoyed this. I loved the pumpkin spice and cinnamon, as well as the nuts! I am vegetarian, so didn't include the turkey, but put Parmesan cheese on top. Yummy! I think nutritional yeast on top would also be tasty. Thanks so much! - 11/3/15
