Roasted Veggies and Orzo

Ingredients
4 oz uncooked orzo2 cups red peppers, chopped 2 cups zucchini, sliced 1 cup cherry tomatoes1 tbsp olive oil1/4 cup feta cheese, crumbled 1 medium onion, (2-1/2" dia) 2 cloves garlic 1/2 fl oz lemon juice2 tbsp basilSalt and Pepper
Directions
Preheat oven to 425F.
Cook orzo per bag instructions.
Cut up peppers in large chunks. Cut zucchini into large chunks (1-2"). Cut onions into large chunks. Add cherry tomatoes whole. Place all cut veggies on a large cookie sheet or in a casserole dish.
Add olive oil to coat veggies. Season with salt and pepper and minced garlic.
Roast in hot oven for about 30 minutes, stirring often.
Drain orzo and place in large bowl.
Add feta and lemon juice to orzo.
When veggies are done, add them to the orzo and mix well. Add chopped basil and enjoy.

    I liked this so much that I made it 2x this weekend. The zucchini was so juicy when cut about 1/3" thick. I didn't use the red peppers this time, but I did add sliced mushrooms and some fresh spinach. To me it was something you would get in a restaurant and was so good you didn't even need meat!! - 4/7/08
