Mashed Celery Root (Celeriac)

Ingredients
Celery root (approx. 1 lb.)1 tbsp. butterdash of salt & pepper.Celery root is very high in potassium - nearly 200mg per 4 oz. serving!
Directions
Peel the celery root and chop into 1" cubes. Put into a medium sauce pan and cover with water. Boil for about 10 minutes, or until soft. Drain thoroughly and mash (preferably with a stick blender) until smooth. Stir in butter and season with salt & pepper.

The serving size is 4 oz. and you'll get about 4 servings from a large celery root.
