Texas Dinner Rolls

1/2 packet yeast1/4 cup + 2 tbsp splenda1/2 tsp salt3 cups unbleached flour1 cup warm water1/4 cup melted Smart Balance Buttery Spread1/4 cup egg beaters
In mixing bowl, dissolve yeast in water. Add splenda, smart balance buttery spread, salt, egg beaters, and 2 cups flour. Beat until smooth.
Stir in the rest of the flour until a soft dough forms.
Turn onto floured surface, knead until smooth and elastic, about 8-10 minutes.
Place in a large greased bowl, turn over once to grease on top (I used vegetable spray). Cover and let rise in a warm place until doubled in size, at least an hour.
Punch down dough and turn onto floured surface.
Divide dough into 13 balls and place into greased baking pan. Cover and let rise until doubled, at least an hour.
Bake in preheated 350 degree oven for 25-30 minutes or until golden brown.
