Kathi's version of Texas Chili

Ingredients
12 oz exra lean ground beef 1 cup chopped celery2 onions, chopped2 garlic cloves, minced1 Tblsp chili powder1/2 tsp ground cumin1 tsp dried oregano1 bay leaf1/2 tsp pepper3 Tblsp minute Tapioca1 cup salsa4 cups stewed tomatoes2 cans kidney beans2 cans black beans
Directions
Saute beef, garlic, onions and celery.
Add spices, tapioca, tomatoes and beans.
Simmer over low heat for an hour or longer (I do mine all day) stirring occasionally. Make a day ahead if possible.
