Quiche - egg, red peppers, mushrooms, carrots, spianch & cheese

Ingredients
9" refrigerated pie crst1/4 red bell pepper, chopped1/4 C sliced mushrooms1/2 C carrots, chopped1/2 bunch of spinach, chopped6 eggs1 C half & half(I guestimated on al of the veggies. Just cut up enough to equal a total of 1-2 cups)
Directions
Prepare crust as directed on package. Sprinkle shredded cheese into bottom of crust. Beat eggs; mix in remaining ingredients. Pour into pie crust; bake @ 325 degrees for 40 minutes. Turn off oven; let set additional 10 minutes. Remove and cool 10 minutes before serving.
