Ingredients
1lb. lean hamburger1 onion, chopped1 clove garlic, chopped3 tbsp. chili powder, or to taste1 tsp. ground cumin2 tbsp. tomato paste1 can red kidney beans1 cup yellow sweet corn, frozen1 tsp. salt4 cups of water1 pkg. Wheat Penne Pasta
Directions
In a large skillet, brown ground beef with the chopped onion. When the beef is no longer pink and the onion is translucent, clear a small area in the middle of the pan and add the chili poweder, cumin and chopped garlic. Cook these spices for about a minute. Add the tomato paste and mix with the hamburger mixture. Add the red beans, corn and water. Mix and bring to a boil. Add the uncooked pasta. Bring to a boil. Cover, turn heat down to low and simmer for 20 minutes. Makes 10 1 cup servings.
