Ingredients
Italian Port Sausage, 8 Links chopped into bite-sized pieces1 Large Can Diced Tomatoes (preferably San Marzano)2 Cans White Kidney Beans1/2 Bunch of Rapini3 Cloves of Garlic, minced (or more to taste)1/2 of a Large Onion, diced (or more to taste)1 Sprig of Fresh Rosemary (or more to taste)4 Tblsp Olive Oil1 Glass of Red Wine
Directions
Heat Oil in a large pot. Add the onion, rosemary, and garlic and cook for a few minutes till onion is translucent. Add the sausages and cook until browned. Pour a glass of wine, take a sip and put the rest in the pot. Add the tomatoes and stir. Simmer for about 15 minutes. Chop the rapini and add it and the beans and simmer another 15 minutes until reduced and sauce is thick. Remove the rosemary stem and serve.
