Quinoa, Black Bean & Mango Salad

Ingredients
3/4 Cup Quinoa1 1/2 Cups Vegetable BrothVeggies:2 Green Onion3 Cloves Garlic2 Cup Mixed Peppers, diced1 (15 ounce) can Black Beans, rinsed & drained1-2 ripe Mango's, dicedDressing:1 tsp sesame oil1 tsp olive oil1-2 tbsp. rice wine vinegar1-2 tbsp. honey1/2 cup chopped fresh cilantrosalt & pepper to taste1 tsp. ground cumin1 tsp. hot sauce
Directions
Cook quinoa according to package directions (usually bring to boil then reduce temp and simmer for 15 mins). While quinoa is cooking, cut and chop veggies and add to a large bowl. Cool quinoa and add to bowl with veggies. Whisk together dressings ingredients and season to taste.
