Asparagus and Manchego Cheese Paella

Directions
Cook chicken in olive oil until brown. Remove from pan. Saute onion and garlic for 2 minutes. Add rice, broccoli, saffron, scallops (or shrimp) and cooked chicken. Reduce heat to medium, cover and cook 20 minutes. Add asparagus, and salt and pepper to taste. Cook 5 minutes, or until liquid is absorbed and rice and asparagus are tender. Remove from heat. Sprinkle with Manchego cheese (or Parmesan). Serve
