Ingredients
2/3 c sliced carrot1/2 c diced onion2 minced garlic cloves3 c fat free broth1 1/2 c diced green cabbage1/2 c sweet peppers2 tbsp tomato paste1/2tbs dried basil1 tsp dried oreganosalt1/2 c parsley, chopped
Directions
saute carrot, onion, garlic and celery in oil until softened, about 5 min. Add broth, cabbage, tomato paste, spices and salt, bring to a boil. reduce heat; add peppers and simmer covered about 15 minutes. Stir in the parsley and heat through
