Captain Hap's Really Green Potato Soup

4x Large Baked Potato, with skin10 oz ham, lean1 pound fresh spinach1.5 cups of nonfat milk1 medium onion1 tbls garlic powder salt and pepper to taste
Bake the potatoes, can be done the night before.
Scoop out the potatoes and mash them with the milk. Set side.
Chop the skins from about half the potatoes and set with the mashed.
Dice the onion and the ham.
Chop the spinach.
Saute the onion until slightly transparent.
Add ham and saute to give the ham a little brown.
Add the spinach and a little water. Cover and steam the spinach down. Toss and cover. Let cook about 5 minutes.
Add potatoes, skins, broth and garlic.
Bring to heat.
Salt and Pepper to taste.
Serving Size: 2 cups
