Sweet Vegan Cornbread

Ingredients
1/2 c whole wheat flour1/2 c cornmeal1/2 tsp baking soda1/2 tsp salt1/2 c applesauce, unsweetened1/2 c soy milk (plain preferably)1/4 c agave nectar2 tbsp canola oil
Directions
1) Preheat oven to 325 and lightly grease a muffin pan

2) Combine the first 4 ingredients in a large bowl. Then stir in the next 3 ingredients (the rest minus the oil.) Slowly add the oil while stirring the mix.

3) Pour the mixture into the muffin cups and bake about 15-20 minutes or until a toothpick inserted in the middle comes out clean.

Serving Size: Makes 6 pieces of cornbread
