Foil Baked Fish

Ingredients
1 cup mixed chopped vegetables (carrots, green pepper, onions, mushrooms, celery)2 Tbsp. Lemon juice2 Tbsp. White wine1 tsp. Parsley, dried½ tsp. Pepper (use ¼ tsp. For a less spicy result)¼ tsp. Oregano¼ tsp. Paprika2 (6 ounce) fish fillets such as orange roughy, flounder, or sole
Directions

1. Over medium high heat, saute vegetables in lemon juice and wine. When vegetables soften, add seasonings.

2. Place each fillet on a sheet of foil. Divide vegetable mixture and place on top of fish. Seal foil tightly. Bake 25 minutes.
