Slow Cooker Chicken and Dumplings

Ingredients
1-2 lbs boneless, skinless chicken thighs1 medium onion, sliced2 medium potatoes, diced2 carrots, sliced2 1/2 cups water1/2 cup chicken broth (low-fat, low-sodium)3 tbs cornstarchseason to taste with s&p, oregeno/thyme/basil or whatever suits your tastes.For dumplings:1 cup flour1 1/2 tsp baking powder1 egg, beaten1/2 cup milk1 tbs cooking oil
Directions
place all ingredients (save dumplings) in the crockpot. Set to low and cook for 8 hours.
For dumplings: mix dry ingredients in a small bowl. In separate bowl, mix wet ingredients. Add wet to dry and mix with a fork. Spoon 6 mounds of dough onto top of stew. Cover and simmer for 20-30 min.
