Coq au vin

Ingredients
1 whole chicken cut into pieces6-12 white pearl onions pealed8 garlic cloves crushed1/2 lb baby portabello6 slices of bacon raw1 tbsp thyme leaves1 bay leave1/2 tsp salt1/4 tsp black peper1/2 low sodium chicken broth2 cups red wine (cab sauv)
Directions
Cook bacon, reserve
Put chicken in same pan until nicely brown.
In crockpot, layer onions, mushrooms and garlic
Add chicken then bacon, then herbs and seasoning
Cover with chicken broth and wine
Cook on low for 8 hours
