Ingredients

    Crepe:
    *Flour, white, 1 cup
    Egg substitute, liquid (Egg Beaters), 0.5 cup
    *Horizon Organic Fat Free Milk, 1.25 cup
    Salt, 1 dash

    Filling:
    Onions, raw, 1 large chopped
    *Kalmata Olives, 8 medium pitted and chopped
    Artichokes, 3 oz chopped
    Spinach, fresh, 2 cup
    Roasting Chicken, light meat, 2 cup, chopped or diced Feta Cheese, 0.5 cup, crumbled

    Sauce:
    Sundried Tomatoes, 0.5 cup
    Basil, 2 tbsp
    *Philadelphia Fat Free Cream Cheese, 8 oz
    *Horizon Organic Fat Free Milk, 0.5 cup
    Garlic (Minced in Water), 1 Tbsp
    Salt and Pepper to Taste

Directions

In a food processor combine sundried tomatoes (rehydrated), Basil, Garilc, Cream Cheese, and Milk and blend well.

Combine all the ingredients for the crepes and blend until lumps are gone. Heat frying pan. Coat with cooking spray and cook on first side until you see small bubbles and starts to brown. Turn and brown on other side and transfer to a plate.

In a saute pan over medium heat spray with cooking spray and saute onion until they become clear. Add chopped chicken, chopped artichokes, chopped kalmata olives and saute till heated through in the last minute add in spinach and toss until wilted.

Place Crepe on the plate, spread sauce inside, and top with other ingredients and roll like a burrito. Reserve a little sauce for the top for color thin a little more with milk and drizzle on top.

Serving Size: 1 Large Crepe
