Quiona Spinach and Tomato

Ingredients
1 cup uncooked Quiona1 package frozen spinach1 large tomato (chopped)1 cup beef stock.5 oz shredded Parm cheese.5 oz shredded Romano cheese1 clove garlic
Directions
Cook quiona according to package directions, using 1 cup of liquid as beef stock. Thaw and squeeze moisture from spinach. After quiona is cooked, add spinach, chopped tomatoes, garlic, cheeses, salt and pepper and mix well.
