Ingredients
2 chicken breast, diced 1" pieces1 TBSP Italian seasoning2 (14 oz) cans low sodium, diced tomatoes w/juice2 red peppers, diced 1"pieces1 medium onion, diced3 cloves garlic, minced1 serrano pepper, diced *OPTIONAL
Directions
Spray crockpot with cooking spray. Put all ingredients listed above, plus 1 TBSP Italian seasoning into crock pot. Cook on HIGH for 4 hours or LOW for 8 hours. Serve over brown rice pasta or brown rice
