Skinny Stuffed Mushrooms

1 container of big, whole mushrooms1 cup frozen chopped spinach3 slices Extra Lean Turkey Bacon (Jennie-O)1/4 tsp Extra Virgin Olive Oil1/4 cup Panko Bread Crumbs (Kikkoman)1/4 cup Weight Watchers Reduced Fat Italian Blend (shredded cheese)Pam Olive Oil Cooking Spray
Preheat oven to 400 degrees F. Remove stems from mushrooms. I had a lot of mushrooms so I planned on making 8 stuffed mushrooms and then chopped up the other mushrooms finely. Warm up the spinach, then drain. Heat the turkey bacon then finely chop. Add olive oil and then saute the mushrooms (can add some pepper and garlic powder). Once sauteed remove from heat and then combine with bacon, breadcrumbs, spinach, and cheese. Season the mushroom caps that you are going to stuff, place them in an oven-safe dish, and fill with the mixture. Lightly spray the tops with the cooking spray when done and cook for 20 minutes in the oven. (Or until golden brown). Eat Warm!! Yum yum!
