1 Large white onion, chopped 2 Garlic cloves, minced1 Tbsp. olive oil 1 Bunch spinach, chopped2 Sweet potatoes, peeled and cubed 17.5-oz. Can garbanzo beans (or about 3 cups), undrained 1/2 cup raisins 28-oz. Can chopped tomatoes, undrainedSalt and pepper, to taste1/2 tsp. Cayenne pepper1/2 tsp. Cinnamon1/4 tsp. Ground Nutmeg1/4 tsp. Ground Cumin1/2 cup uncooked white rice
Fry the onion and garlic in the oil over medium-high heat until the onion begins to brown, about 5 minutes. Add the spinach, cooking for a couple of minutes until semi-wilted. Add the sweet potatoes, garbanzo beans, raisins, tomatoes, salt, and spices and cook for 2 to 3 minutes.
Mix the rice in. Cover and cook for 25 minutes, until the rice is done. Add water or vegetable stock as necessary.
Serving Size: Makes 5 good sized bowls
