2 t. olive oil1 lb. lean ground, beef, turkey or shredded chicken1 onion, chopped2 cloves garlic, chopped1 bell pepper, seeded & chopped1 14 oz can of crushed or diced tomatoes1 32 oz. bottle of reduced sodium tomato or vegetable cocktail juice1 T. fresh lemon juice1 14 oz. can of beans (your choice) rinsed and drained1 T. ground cumin1/8 t. cayenne, or to taste1/4 c. each chopped cilantro & parsley
In a stockpot, heat olive oil over medium-high setting. Saute' meat until cooked through, about 5 minutes. Drain and set aside.
Saute' onion, garlic, & peppers until soft, about 5 minutes. Stir in remaining ingredients, except cilantro and parsley. Cover and simmer 20 minutes. Stir in cilantro and parsley. Cover; simmer 10 minutes longer. Store in refrigerator up to 5 days.
Serving Size: Make 16 cups 1 serving = 3 cups
