Peant Butter Peanut Chocolate Oatmeal Cookies

Oats, 3 cups*Bob's Red Mill - Gluten Free All Purpose Baking Flour, 0.33 cupBaking Soda, 1 tspBaking Powder, 1 tsp*Kosher Salt, .5 tspBrown Sugar, 1 cup, packedGranulated Sugar, 1 cupApplesauce, unsweetened, 1 cupPeanut Butter, smooth style, .5 cup(Egg, fresh, 2 largeVanilla Extract, 1 tspPeanuts, dry-roasted, 2 cup*Baker's Bittersweet Chocolate, 3 oz chopped
In large bowl, combine oats, flour, baking soda, baking powder, and salt.
In mixing bowl combine sugars, applesauce, and peanut butter. Mix on medium speed until fluffy.
Add eggs and vanilla to sugar mixture, mix until well combined.
Add oat mixture to batter, mix until combined.
Add peanuts and chopped chocolate to batter, mix until combined.
Drop by spoonfuls on baking sheets lined with parchment paper.
Bake 12-15 min at 350.
Serving Size: Makes about 6 dozen
