Ingredients
1lb. Ground Beef1tsp Olive Oil1 med. Onion-chopped3 med. Carrots-thick grate3 med. Celery-small dice1 cup Red Kidney Beans-cooked1 cup White beans-cooked44 oz. Beef Stock1 1/2 tsp Oregano2 tsp. Black Pepper2 tsp. Parsley-chopped1 tsp Tabasco Sauce-or to taste24 oz. Spaghetti Sauce4 oz. Small dried pasta
Directions
Saut� beef in oil in large 10-qt. pot until beef starts to brown. Add onions, carrots, celery and tomatoes and simmer for about 10 minutes. Drain and rinse beans and add to the pot. Also add beef stock, oregano, pepper, Tabasco, spaghetti sauce, and noodles. Add chopped parsley. Simmer until celery and carrots are tender, about 45 minutes. Makes 4 1/2 qts. of soup!
