Garlic Aioli

Ingredients
4 Cloves Garlic, crushed1 Egg Yolk1 C Olive Oil1 tsp Lemon Juice1 tsp Dijon Mustard1/2 tsp Salt1/8 tsp Pepper1/2 tsp Cold Water
Directions
In a small bowl whisk together the garlic, egg yolk, dijon & salt. Slowly whisk in 1/2 c of the olive oil. Add the lemon juice, water & pepper & mix. Then slowly whisk in the remaining 1/2 c olive oil.
This is great served with fish or for dipping roasted fingerling potatoes in.
