Chicken Mole Pizza

Ingredients
Chef Meg's Mole Sauce (1 cup)Chicken breast, cooked and diced, 321 gramsOnions, raw, chopped, 160 gramsMozzarella cheese, (part skim milk) 135 grams2 Roma tomatoes, chopped1 avocado, chooped1/2 c. lightly packed cilantro, chopped2-3 cups flour1 t. sugar2 1/4 t. yeast (1 pkt.)1 c. warm water2 T. olive oil1 t. salt
Directions
Make pizza dough: In a large stand mixer bowl, dissolve yeast and sugar in warm water. Let set 5 minutes. Add 2 cups flour, sugar, oil, and salt. Mix together. Add remaining flour until dough sticks together on dough hood. Knead for 5 minutes with dough hook. Let rise 30 minutes. Punch down and place in a greased cookie sheet. Bake at 450* 8-10 minutes, until crust is lightly browned. Remove from oven. In a bowl, mix mole sauce, chicken, and onion. Place evenly over crust. Sprinkle cheese over the top and return pan to the oven. Cook 10 minutes, or until cheese is melted and crust is golden brown. Sprinkle chopped tomatoes and avocados over the top. Sprinkle with cilantro.
