Southwest Chicken & Rice

Ingredients
Rice 1 cup white rice2 cups waterChicken2 lbs. Chicken breast diced1 tbsp. olive oil1 cup dice onion3 cloves of garlic1 tbsp. poultry seasoning1 tbsp. pampered chef southwest seasoning1 tsp. lawry's seasoned salt1/4 tsp. ground red pepper1 can diced tomatoes1 can black beans, drained1 can yellow corn, drained1 8oz. can tomato sauce
Directions
Cook rice according to directions.
While rice is cooking, heat olive oil in large skillet.
Add seasonings.
Cook chicken in oil until no longer pink.
Add onion and garlic and cook until onion is almost transparent.
Add cans of tomatoes, black beans, corn and tomato sauce.
Allow to simmer until rice is finished cooking.
Serve chicken over rice.
