Low Fat Parmesan'd Cream of Tomato & Basil Soup

4 tbsp Organic Chicken Stock1 small red onion, diced2 cups dry white wine1 12 oz (398 ml) of organic tomato sauce 2 cups fat free whipping cream3 Tbsp fresh basil, choppedSalt to tasteBlack pepper to taste2 tbs brown sugar1 tsp lemon juice1/4 cup Parmesan cheese
ADD stock in a heavy sauce pan. Add red onions and sauté until tender, about 5 minutes. Add white wine and reduce by 3/4. Add tomatoes and heavy cream, bring to a simmer and reduce by 1/2.
PUREE soup in a food processor. Stir in 2 Tbsp chopped basil, salt and pepper, parmesan, sugar and lemon juice.
GARNISH with remaining fresh basil and tomatoes and serve.
