12 large eggs, beaten1 bell pepper, sliced1 onion sliced1 clove garlic1/2 tsp Italian seasoning1/2 c feta cheese1 cup spinach
Saute bell pepper, onion, garlic, italian seasoning until vegetables are soft. Spread evenly accross bottom of skillet. Sprinkle Feta cheese on top. Layer with spinach. Top with beaten eggs. Cover Skillet and cook on low heat until eggs are cooked through.
