I large head of cauliflower, cooked and mashed to make a cup full, drained1/4 lb of salted butter2 fl ounces of heavy cream1 tsp minced garlicsea salt and ground black pepper to taste
Chop the cauliflower and steam or boil it until tender. Drain well. Add butter and stir while it melts. Add cream until desired consistency, about an ounce.
