Yogurt, plain, low fat, 0.25 cupSalsa, 2 tbspBlack Olives, canned (small-extra large), 5 large Romaine Lettuce (salad), 0.25 cup, shredded Green Onions, raw, 1 tbsp chopped Petite Cut Diced Canned Tomatoes, 3 tbspBeans, pinto, 0.50 cupCorn Tortillas, 1 tortilla, medium (approx 6" dia) Cheese, Kraft Mexican Style Taco Cheese, 0.25 cup

1. Mash pinto beans.
2. Spread in the middle of the corn tortilla.
3. Layer yogurt over pinto beans.
4. Add sliced olives.
5. Layer remaining ingredients.

Yum! I made this using black beans, since that's what I had on hand (boiled from dried beans, then mashed). I also have a friend whom I'm SURE will want to try it, since he loves all things Tex-Mex, surely adding hot peppers before he indulges, since his palate always craves the extra kick 8-) - 3/17/12
