Jalapeno Cheddar Cornbread

2 boxes of Jiffy cornbread mix, prepared per box (2 eggs, 2/3 cup milk)1 jalapeno pepper1/2 medium yellow onion1 Tbsp olive oil1 c cheddar cheese1/2 tsp ground cumin
Saute the diced onion and bell pepper in olive oil. When tender, turn off heat.
Mix the cornbread mix per box directions. Stir in the jalapeno onion mixture, 2/3 c cheddar cheese and the cumin.
Pour into a 9x9 pan and top with the remaining cheddar.
Bake per package instructions.
Serving Size: Makes 9 2.5x2.5 inch servings
