1&1/2 lbs extra lean ground beef1 15oz. can dark red kidney beans, drained1 15ozs. can diced tomatoes with chilis, partially drained1 28oz. can whole tomatoes, partially drained and lightly crushed1 medium onion, chopped1 medium bell pepper, chopped8 medium mushrooms, chopped2 tsp. minced garlic1 small chipotle pepper in adobe, minced (optional for spice wimps)1 tsp. each salt, chili powder, paprika, and guar gum1/2 tsp. each cinnamon and dried oregano
Layer all ingredients in your slow cooker in the order listed. Cook on low for 6 hours or on high for four.
Serve with a dollop of sour cream and a little crumbled cheddar for a hearty low-carb dinner.
