Cap'n Crunch Chicken Fingers

2 & 1/2 lbs chicken breast (boneless & skinless)4 cups Cap'n Crunch Cereal1/2 cup flour5 egg, scrambledNote: Not all of the cereal, flour, and eggs will be used, but you need enough to evenly coat all pieces of chicken.
Pre-heat oven to 375 degrees.
Clean all visable fat from chicken and cut into strips.
Crush cereal into crumbs in a food processor or by placing in a zip lock back and use a rolling pin.
Set up your "coating station": one plate with cereal crumbs, one plate scrambled eggs, and one plate flour.
Coat each chicken strip in egg, then flour, another coat of egg, and then cereal.
Place all strips on a baking sheet coated in cooking spray.
Bake until cooked through, for approximately 25-30 minutes.
Enjoy!
