coconut curry chicken and couscous

Ingredients
1 cup coconut milk2 chicken breasts, cut into stirfry strips1 cup couscous1TBS flour1TBS curry powder1 cup water1 cup carrots, cut upolive oil
Directions
mix milk and 1/4 cup coconut milk in a small sauce pan and bring to a boil. Add couscous, remove from heat, and leave covered.
combine flour and curry powder in a bowl, add chicken and mix to coat chicken. heat oil in a sauce pan and add chicken. Cook for about 5 minutes. Add remaining coconut milk and carrots and simmer for 12-15 minutes, until chicken is thoroughly cooked.

Serving Size: 1/2 cup couscous, 3/4 cup curry mixture is one serving, makes 4
