Tomato Beef Curry

Ingredients
1 pound Ground Turkey (or lean ground beef)2 Tbsp Olive Oil1 large onion, chopped4 Tsp Minced Garlic4 cups Broccoli Florets2 Whole Carrots2 Tbsp Curry Powder2 Tbsp Tumeric28 Oz Tomatoes, No salt added1 1/2 cups Couscous, cooked6 Tbsp cider vinegar4 Tsp dill
Directions
Brown the onions and garlic. Shred the carrot. Brown the meat in onions and garlic. Add carrot and saute until tender. Add the curry powder and cook for 2 minutes. Stir in the tomatoes, vinegar and dill. Cook and stir continuously until all the juices are removed from the bottom of the pan.
