Steve's Grilled Potato Pouches

Ingredients
5 Small Idaho Potatoes (about 1 pound)1/2 Large Sweet Onion, chopped1 Green Pepper, diced3 Pats Salted ButterGarlic Pepper Salt
Directions
Scrub potatoes. Slice potatoes using mandolin. I prefer skin on, but skin off works as well. Dice onions and peppers. Divide potatoes, onions, and peppers into three foil pouches. I recconmend non-stick foil, but any heavy duty foil will do. Layer potatoes, onions and peppers into foil pouches. Season with garlic-pepper salt to taste. Place one pat of butter in each pouch then seal pouches by folding foil closed on top first then ends.
Place on a pre-heated grill over medium heat. Cook time is approximately 20 minutes, but check frequently, because once the packs are done they can burn quickly.
Remove from grill and serve. Each pouch is a fairly large portion, but generally there are no leftovers in my home!
