Tamale Casserole

Ingredients
1 lb. lean ground turkey1 T. olive oil1 small green pepper, chopped1 c. celery, chopped1 small onion, chopped1 can whole kernel corn or 10 oz. frozen)1 can (15.5 oz) diced tomatoes (opt. with green chiles)1/4 c/ cornmeal2 eggs, lightly beaten1.5 tsp. salt1/4 tsp. pepper1-3 T. Chili powder4 oz. Shredded (Cheddar)/Monetery Jack
Directions
1. In large frying pan saute the ground turkey in olive oil. Add the pepper, celery and onion. Cook until turkey loses its pinkness and onion is limp.
2. Turn into large mixing bowl. Add tomatoes, cornmeal and corn. Stir to blend.
3. Lightly beat egg. Add salt and spices. Add to the above.
4. Turn into 2 quart casserole sprayed with Pam. Cover. Bake at 375 for 45 minutes.

5. Sprinkle cheese on top and return to oven until cheese is melted.
