Oatmeal Raisin Cookies

1 1/2 cups white flour1 cup wheat flour1/2 teaspoon baking soda1/2 teaspoon salt1 cup oats1 tablespoon ground flax seed1/2 cup brown sugar1/2 cup white sugar1/4 cup butter3/4 cup applesauce2 tablespoons honey1 tablespoon vanilla1 egg3 tablespoons water1 cup raisins1/2 cup walnuts (optional)3/4 cup coconut (optional)
Preheat oven to 350 degrees.
Combine flours, soda, salt, oats, and flax. Set aside.
In a separate bowl, combine sugars and butter. Mix thoroughly, then add honey, vanilla, eggs, and water.
Combine flour mixture with wet ingredients.
Mix in raisins, and walnuts and coconut, if desired.
Drop by rounded tablespoons onto ungreased cookie sheet.
Bake for 13 to 15 minutes.
Serving Size: makes about 3 dozen cookies
