Sugar Free High Protein Cheese Cake

Ingredients
Melt 1 TBS coconut oil in a sauce pan add 6 TBS (1/2 cup) Flax Mealadd 1 large eggadd 1 pinch sea saltstevialemon rind from one lemon1/2 tsp vanillawaterMix all together to form a moist dough and then press in the bottom of a spring form pan. Bake at 400* until done (or about 10 minutes) Set out to cool.Turn the oven to 350*In your blender, mix 4 cups fat free cottage cheese; 1 pint 100% egg whites; lemon rind; stevia; 4 tbs coconut flour; vanilla; and sea salt until very smooth and fluffyPour into spring form pan and then bake 30 to 40 minutes or until a knife inserted in the center comes out clean.Let cool on a baking rack.Top with sugar free jam or sugar free chocolate topping for an extra treat.
