350g basmati rice50g ghee1 large onion, chopped1in piece of ginger, grated2 garlic cloves1 tsp ground coriander2 tsp ground cumin1 tsp turmeric0.5 tsp chilli powder3 medium carrots, thinly sliced225g french beans, halved225g cauliflower florets1 tsp garam masala
Cook rice
Melt ghee & fry off onion, garlic & ginger for 5 mins
Add the coriander, cumin, turmeric & chilli & fry for 2 mins more
Add 1.5 pints water to the spice mixture & bring to boil; add carrots and beans and simmer for 15 mins, then add cauli and simmer for another 10 mins
Add the rice, stir in garam masala and serve
