Two-bean Turkey Chili

Ingredients
1 lb. of lean ground turkey1 can of crushed tomatoes1/2 cup of chopped green bell peppers1/2 cup of chopped onions2/3 cup of frozen corn 1 cup of dark red kidney beans1 cup of pinto beans2 cloves of finely chopped garlic2 tablespoons of cilantro (dried)1/2 tsp. salt3 tbsp. of chili powder1-2 Bay leavesCouple of twists of ground black pepper
Directions
In a medium sauce pot, sautee peppers, onions, and garlic in olive oil until tender and slightly browned. Remove from pot and put aside.

Brown turkey until cooked through, and drain. Add cooked vegetables to meat and mix/brown for another minute or so.

Add crushed tomatoes to meat mixture, along with corn, beans, and spices. Simmer for 30 minutes on low-medium heat, stirring occasionally.

Serve over brown rice with shredded low-fat cheddar cheese if you so desire.
