Peanut-Butter-Cream Cheese Stuffed French Toast

For french toast:2 slices high-fiber whole-wheat bread1/4 cup liquid egg whites2 tbsp unsweetened vanilla almond milk (or regular milk)1/2 tsp ground cinnamon1/2 tsp vanilla extractFor filling:1 tbsp peanut butter (I used 1 tbsp peanut flour mixed with 1/2 tbsp water)1 tbsp fat-free cream cheese (or light)optional: 1 packet stevia
To make the french toast, combine egg whites, milk, cinnamon and vanilla in a shallow dish and stir to combine (until cinnamon "clumps up). Spray a skillet with nonstick spray and bring to medium or medium-high heat. One slice at a time, submerge each side of the bread into the egg mixture and cook on skillet, turning after about 1 minute and continuing until it's your desired browness.
To make the filling, simply combine the peanut butter [[if using peanut flour, first mix flour with water with a knife]] and the cream cheese. Spread over finished toast.
Sprinkle covered slices with stevia and dig in!!
