Kale and Tofu Stir-Fry

Ingredients

1/2 tps cayanne pepper1 box extra firm tofu6 Kale leaves3 cloves of garlic2 tsp soy sauce1 medium shalot1 tsp fresh ginger3 tsp extra virgin olive oilSalt & pepper to tast
Slice Kale into thin stirps (stems incuded)
Cube tofu into 1/2 inch cubes
Mince garlic
Dice shallot
In a pan heat 1 tsp of EVOO till smoking
Add Tofu and ginger cook until carmailzed.
Add soy sauce, cayanne pepper, garlic, cook for about 2-3 min (until herbs are soft)
Remove tofu from pan, add 2 tsp of evoo then add kale and shallots salt & pepper cook until tender
Serving Size: Makes approx 3 - 1 cup Servings
