Broccoli soup (with onions, carrots, celery - all pureed)

Ingredients
1 medium onion - chopped2 carrots - diced2 stalks celery - sliced1 clove garlic - chopped4 cups vegetable broth (or water & broth)2 bunches broccoli (more if desired)1/2 cup powdered milk2 tablespoons cornstarch1 teaspoon salt (less if desired)1/4 teaspoon pepper (less if desired)
Directions
Combine chopped onions, sliced carrots, sliced celery, and broth - bring all to a boil. Add broccoli and cook for 5 to 10 minutes until tender. Transfer soup to blender or food processor and puree, adding powdered milk and cornstarch. Return to original pot and add salt and pepper. Heat until rewarmed.

Serving Size: makes about 4 1.5 cup servings
