Sweet & Spicy Chicken Fajitas w/Caribbean Slaw

Marinade1/2 cup pineapple juice2 tbsp lime juice1 sm habanero pepper seeded and minced1/2 med red onion diced1 lb chicken breast (boneless, skinless)Slaw1 c shredded red cabbage1/2 c shredded carrot1/2 med red onion sliced thin1 Tbsp rice wine or white wine vinegarhandful chopped fresh cilantrodash black pepper to tasteToppingsavocado4 pineapple rings - fresh is bestsalsa (optional not incl in cals)tortillas (not incl in cals)
Combine marinade ingredients and add chicken. Marinate 30 min or overnight.
In med bowl combine all slaw ingredients and set aside.
Grill 4 pineapple rings in non stick pan. Cut in half and set aside, cover and keep warm. Cook chicken in pan until done.
assemble fajitas using your favorite tortillas. Layer slaw, chicken, avocado, pinapple. Top with favorite salsa if desired.
Serving Size: serves 4
