4 chicken breastsalt/pepper to taste1 cup of brown rice1 cup of sliced onion2 tblsp of cider vinegar4 tblsp of reduced fat sour cream1 cup salsa1 can of black beans1 tblsp Adobo seasoning
cook brown rice according to directions
grill chicken breast with salt/pepper to taste; slice into bit size pieces
heat up a can of black beans with a tblsp of Adobo
in seperate pan sautee onions in vinegar until tender then drain
serve: place rice on plate and top with beans (juice adds lots of flavor to rice); place chicken ontop and garnish with salsa, onions, and sour cream Enjoy!
